Tortang Talong (Eggplant Omelet)



Tortang Talong or Eggplant Omelet wherein flame broiled or boiled eggplants absorbed a beaten egg mixture and after that fried brown. This is a basic yet heavenly Filipino recipe that you can appreciate for lunch or supper. Definitely a must try!

It's very easy to prepare and cooking time is short of what 10 minutes and this won't harm your wallet. Tortang talong is best consumed with steamed white rice and banana ketchup or your own favorite seasoning / sauce. One of the few ways I can make kids eat their vegetables.

Sinigang na Hipon (Shrimp)


Sinigang na Hipon (Shrimp)

1 pack Tamarind Soup Base Mix 

400 ml Water

1 Tomato, sliced

1 Onion, sliced

2 pieces Radish, sliced

1/2 kilo Hipon (Shrimps)

Kangkong (Water Spinach)

2 Long Chili

Salt

Patis (Fish Sauce) to taste



1.) In a pot, pour the Water and add the Tamarind
Soup Base Mix.

2.) Add the Onions, Tomatoes. Bring to a boil then
add the Radish.

3.) Add the Hipon (Shrimps), Kangkong (Water 
Spinach) and Long Chili.

4. Boil for 2 to 3 minutes. Season to taste.

Green Beans (Baguio Beans) with Tomato


Green Beans (Baguio Beans) with Tomato

1 kilo Green Beans (Baguio Beans), washed and 
cut diagonally

1/4 cup Butter

1/4 cup Onion, minced

1 tablespoon Brown Sugar

1 Calamansi

1/2 teaspoon Dried Oregano, crushed

Salt and Pepper

2 Tomatoes, chopped



1.) In a pan, cook the beans for 18 to 20 minutes
in a small amount of water. Drain and set aside.

2.) Melt the butter in a skillet then add the Garlic
and Onion. Sautè in low heat for 3 minutes.

3.) Add the Brown Sugar, Calamansi Juice and
crushed Oregano. Add the Tomatoes.

4. Add the beans and stir. Season with Salt and
Pepper. Serve hot.

Crab and Cabbage Tortilla


Crab and Cabbage Tortilla

1 Cabbage, shredded

1 cup Crab Meat, flaked

1 clove Garlic, minced

1 Onion, minced

1 Tomato, chopped

10 tablespoon Lard

2 Eggs

1 tablespoon Fish Sauce (Patis)



1.) Sautè the Garlic in lard until brown. Add
Onion, Tomato and Cabbage with little water.

2.) When cooked, add the Crab Meat and pour
a little patis. Set aside.

3.) Beat the Egg whites, then add the yolks. Add
the crab mixture and fry on a banana leaf until
brown.

4.) Serve hot with ketchup.


Pancit Molo


Pancit Molo

1/2 cup Ground Pork

1 Egg

1/4 cup Shrimps, chopped

2 tablespoon Chestnuts, chopped (optional)

1/4 Green Onions Leaves, chopped

Molo Wrapper

Salt and Pepper



1.) Mix all the ingredients.

2. Wrap one teaspoon of filling in each prepared
Molo Wrapper.

3.) Set aside.


Broth

1 Chicken Breast / Fillet, boild and flaked to fine
pieces.

1 Garlic, pounded

1/2 cup Onion, chopped

2 liters or 10 cups Chicken Broth

Salt

1.) Prepare Chicken Broth in a pot.

2. In a separate pan, sautè the garlic until 
brown. Add Onion and cook for 1 minute.

3. Add the Chicken Flakes. Cook for about 5
minutes.

4.) Add the mixture into the the chicken 
broth in a pot. Boil, and drop prepared molo
into the broth.

5. Serve hot and season with Salt. Add the 
chopped Green Onion Leaves.


Chicken Tinola


Chicken Tinola

1/2 kilo Chicken

1 tablespoon Garlic, minced

2 cups Water

3 tablespoon Onions, chopped

1 Sayote or Green Papaya, sliced

Fish Sauce (Patis), to taste

1 Ginger, cubed



1.) Sautè the Garlic, Onions and Ginger.

2.) Add the Chicken and Fish Sauce (Patis).

3.) Add Water and cook until the chicken is tender

4.) Add the Sayote or Green Papaya and boil until
the veggies are cooked.

5.) Serve hot with patis.

Homemade Coleslaw


Homemade Coleslaw

1 medium sized Cabbage, chopped

2 small Carrots, chopped

1/4 cup Sugar

3/4 cup Mayonnaise

Salt and Pepper



1.) Mix every ingredients. Season with Salt and
Pepper. Chill before serving.

Oriental Soup


Oriental Soup

2 Eggs, beaten

2 Green Onions, minced

1 1/2 tablespoon Cornstarch mixed with 
3 tablespoon water

800 ml Chicken Broth

1 teaspoon of Salt

1/4 teaspoon White Pepper



1.) Boil the Chicken broth in a pot and add Salt 
White Pepper.

2.) Add the Cornstarch mixture. Stir for about 2
minutes.

3.) Remove from heat and add the eggs and stir.

4.) Sprinkle the Green Onions. Serve hot.


Clear Vegetable Soup

1/4 cup Celery, diced

1/2 cup Carrots, diced

1/2 cup Turnip, diced

5 cups Chicken Broth

1 teaspoon Oil

1 tablespoon Garlic, minced

1 tablespoon Onion, minced

Salt and Pepper




1.) Sauté the Garlic and Onions.


2.) Add the veggies and cook for a few
minutes.


3.) Add the Chicken Broth. Boil for 10
minutes. Season with Salt and Pepper.


4.) Serve Hot.



Waldorf Salad


Waldorf Salad

1 Apple, cut into squares

1/4 cup Celery, chopped

1/2 cup Crushed Walnuts

2 cups Boiled Chicken, cut into squares

3/4 to 1 cup Mayonnaise

Salt and Pepper



1.) Combine the Apple, Celery, Chicken and
Crushed Walnuts.

2.) Add the Mayonnaise. Season with Salt and 
Pepper.

3.) Chill before serving.

Lumpiang Shanghai




INGREDIENTS:
  • 10 pieces Baguio Beans
  • 2   pieces Large Carrots
  • 1/2 kilo Ground Pork
  • Lumpia Wrapper
  • 1/2 cup Soy Sauce
  • 1 teaspoon Ground Black Pepper
  • Oil (for deep frying)
  • Garlic (minced)
  • Onion (diced)
  • Seasonings (if desired)
